I'll be taking a bit of a hiatus from blogging for a few days. Tonight I'm going to JOHN MAYER!! Woohoo! But I won't be getting back until very very late, so no blogging will happen tonight. Then tomorrow I'll be going to South Dakota to visit the in-laws for the weekend, and they have dial-up, so there will be no blogging this weekend either.
On Monday, I will be saying goodbye to my Uncle Johnny. He passed away on Tuesday after a fairly short battle with Leukemia. His funeral is on Monday morning, and if we get back early enough from SD on Sunday, I'll be going to the prayer service. Please keep him in your thoughts as he ends one journey and begins a new one.

Chicken Spaghetti
A few days ago, I stumbled upon this great blog. It's called The Pioneer Woman. I was amazed! This woman is the wife of a rancher. She works on the farm, has four kids (whom she homeschools), makes these elaborate meals, does some photography, gardens, and has time to blog about it all. Talk about Super Woman! And she's a very good writer. She's funny and keeps the reader interested. I was absolutely enthralled.
Anyway, I found this recipe for Chicken Spaghetti and thought it looked really good! So I decided to make it for supper tonight. Well, I was going to make it last night, but my parents decided to come visit and brought Subway. Who am I to turn down a free meal that I don't have to cook? So we just pushed the chicken spaghetti back one night. This recipe would also be great for OAMC (once a month cooking, aka freezer cooking or make-ahead meals). I plan to do some freezer cooking one of these weekends, so I'll have to keep this one on the list.
Since I knew I was going to make it today, I cooked and shredded the chicken last night. Now, the Pioneer Woman (her name is Ree) cuts up a whole chicken, boils it, then uses the homemade broth. I, however, am not as Super Woman-ish (that's totally a word) as her, so I just fried up a few chicken breasts and then shredded them using an extremely high-tech device called... a fork. Then I put it in a Rubbermaid container and stored it in the fridge until I was ready for it.
I broke up the noodles like the recipe says, and ended up with a little over two cups.
I filled my pot up with water and added about a cup and a half of canned chicken broth in which to boil the noodles. Then I ignored the pot while I was slicing up the green pepper and onions, until it's hissing demanded my attention because it was rapidly boiling over. Oops.
I only used about half of the onion because we don't care for a really strong onion flavor here in the Richter household. Next time I'll only use half of the green pepper too.
Then I drained the noodles and dumped them into a mixing bowl.
And I added the chicken that I cooked last night.
Ree says that she sometimes likes to use cream of chicken and mushroom soup instead of regular old cream of mushroom. Well, I didn't have any of that. But I did have one can of cream of chicken and one can of cream of mushroom. So I improvised.
Then I added the diced green peppers, onions, and pimentos.
As I added the spices (Lawry's seasoning salt, black pepper, and red pepper) and cheese, I realized that I was going to have no room to stir it.
So I transferred it to a larger bowl. I'm very good at making lots of dirty dishes. Ask James.
I dumped it into a casserole dish (again, I should have used a bigger one, but oh well) and loaded the top with cheese. Mmmm.
I cooked it on 350 degrees for 45 minutes and here's the final product.
The cheese got a little crusty on top instead of melty. I don't really know why. It might have been the brand (Archer Farms - the Target brand). It wasn't too big of a deal though.
This dish was very tasty! James liked it too! I'll make it again, even though it's a little more labor intensive than the stuff I usually make (I'm an amature). I'll definitely be putting this on the OAMC list. Next time I'll cut down on the green pepper, use a little more onion, and I'll actually measure the spices (I think it may have been a little heavy on the red pepper). Also, I'll split it into two casseroles because it makes a lot. We'll have three days worth of meals from this.
All in all, it's a very good recipe! A+! I recommend you try it!

CVS - Round 2
Ok, so I'm slowly starting to understand the CVS craze. Thanks Sarah! :)
I just want to take a quick second to tell all you CVS shoppers out there that you should scan your card at the little red price check stations at the store every time you go! Yesterday when I went, I scanned my card and two coupons printed out. $1 off any CVS paper product and $1 off any CVS skin care product.
Here's what I bought:

$2.99 - $1 CVS coupon = $1.99 (I thought these might come in handy for our many upcoming camping trips this summer.)
I used my $10 ECB that I got after my last CVS purchase, and my total came to $5.02! Even I was surprised! And I earned $9 ECB for next time.
A few things I've learned so far about this store.
1) Walk around and look for clearance signs. Sometimes you can find things for up to 75% off.
2) It's very easy to see things that look like good deals, but be careful! CVS prices their products higher than at your average Target or Wal-Mart. Then they have huge sales, but sometimes those prices are still higher or the same as other stores. My advice is to make a list of the things you're going to buy that you know are good deals and stick to it. That might help you avoid buyers remorse when you realize you spent more than you had to.
3) On your first purchase, the ECB don't help to bring down the total. But it will help on subsequent purchases. Once you have some ECB in reserve, you will buy stuff that gives you more ECB while using your current ECB. Ok, that made sense in my head. Hopefully it will make sense in yours too.
I will definitely continue to pick apart the weekly CVS ads, but I'm still not totally sold. I sort of feel like they're trying to trick me with their "sales" and it kinda makes me mad. That's probably silly, but that's how I feel. As a result, I won't buy anything except super deals on things that I know are going to be cheaper at CVS. I don't want to get ripped off.

Isaac's First Trip to the Park!
Ah, I love spring! The temperature got to about 65 degrees today! It was a little windy, but it wasn't a cold wind. It was sunny and beautiful! So James and I put Isaac in his stroller and Gizmo on his leash, and headed to the park that's only a few blocks away from our house.
Yeah, I know. Gizmo needs a hair cut. Big time. I'm working on it.
Anyway, Isaac was way too small for the swing, so we had to stuff three blankets behind him and his sweatshirt in the front to make him fit. He absolutely loved it! He was laughing pretty much the entire time. I can tell we'll be frequenting this park in the summer time. We're lucky to live so close to it!

Another Successful Target Adventure
Well, mostly successful. Unbeknownst to me, it is Canadian spring break this week. Grand Forks is only a hop, skip, and a jump - or an hour car ride - away from the Canadian border, which means on weeks like this, all of our stores become packed with swarms of Canadians, especially since the exchange rate is great for them right now. Also, a lot of people, myself included, don't work today because of Easter. So, Target was packed. While looking for a few items that I wanted, I ended up getting too frustrated and giving up. But that's not to say I didn't get some pretty good deals on the stuff I did find. We bought a lot of stuff, so I won't go through and itemize every single thing, but I will highlight the best deals that I found.
Coke products at our store were on super duper sale for $2.20 each. There was a limit of eight, so we bought eight. I might actually go back tomorrow and get eight more. We can just store it in the basement, and you only find deals like this on Coke once in a blue moon. We also bought some Dr. Pepper, which was on sale for $2.50.
While I was shopping for the boring old necessities, James and Isaac ran off to various departments that held James's interest a little better. While in the hardware department, James ran across these... things. Screws and bolts I guess. I guess it's something he was looking for, and we are always needing things like this in our fixer-upper house, so he picked a couple up. I must be rubbing off on him because the first thing he showed me was the clearance sticker. LOL! Good job, hunny!

You must be thinking, "Why on Earth would someone with an 8-month-old need games like these?" Well, I don't. I'll probably save them for gifts. But I do plan on keeping Bop It for myself because it looks fun. And I've always loved Connect Four, so I might keep that one too. But regardless, I got all of the above items for a total of (drumroll please!)... $3.00, so who cares what I do with them. They were practically free.
How, you ask? Well, Connect 4x4 and Bop It were both on sale for $14 each. Target has a deal running where you can get the Monopoly card game for free (reg. $5.24) when you buy a game that is priced at $10 or more. Also, I found a bunch of printable coupons from http://www.playsaver.com/, but I just searched for them again and it looks like they are no longer available. I used a printable for $4 off Connect Four and a printable for $5 off Bop It. I also was able to use two $5/1 for ANY Monopoly game, even though it was already free. Then I used two Target printable coupons for $3 off select games (here). Here's the breakdown:
$14+14+5.24+5.24 = $38.48 (total cost of all four games)
$38.48 - $4 - $5 - $5 - $5 - $5.24 - $5.24 - $3 - $3 = $3 total that I paid for all four games.

With all the sales, price cuts, coupons, etc... we saved $112.12! Pretty good. That means we saved 44% on our total bill! It's not half, but it's pretty darn close! Especially since we bought a bunch of stuff for Isaac's easter basket, some Advil, a book for James, and various other things that weren't even on sale/we didn't have coupons for.

First I went to CVS. I'm not really a huge fan of CVS, but my cousin insists that you can really get some good deals there. And you can, but everything is so overpriced to begin with that I never know if I really am getting a good deal, even if it's on sale. Anyway, Here's what I bought:
The total cost for the above products was $11.05, including tax.
The Huggies were on "sale" (I use quotes because this sale of theirs actually brings the price down to what you'd normally pay at Wal-Mart or Target) for $8.99, plus if you buy two you get $5 ECB (Extra Care Bucks - it's their reward program. It means I'll get $5 off my next purchase at CVS, same as cash). I also used two of my $3/1 printed coupons.
$17.98 for both packs - $6 coupons - $5 ECB = $6.98 for both packs, or $3.49 each.
This is a great deal, but I'm not totally sold on counting the ECB as part of the deal, since I still had to pay that $5 yesterday. It doesn't actually help me until the next time I shop. Plus, I have to remember to use it before it expires on May 1st. Either way, it's still as much as I would have paid at Target while using my coupons, so I might as well get a little extra bonus.
I've always wanted to try those Thermacare heat packs. I bought two 3-packs of the 12 hour kind. I think they'll be great for menstrual cramps and whatever else hurts. I think James will like them too. They were on sale for $6.49 each, plus another $5 ECB wyb (when you buy) two, and I had two $3/1 coupons (here).
$12.98 for both packs - $6 coupons - $5 ECB = $1.98 for both packs, or $0.99 each.
Again, I'm counting the ECB. And I don't know how much these usually go for, but I know that 99 cents for a 3-pack has to be a good deal. And now I have a total of $10 ECB to use next time I shop there!

It cost me $15, and it came with a travel pack of sensitive wipes, and a travel pack for diapers. It said it was a $25 value, but who knows. I really have no idea if this was a good deal or not, but I wanted to try the new Cruisers.
Then I headed to Menard's. I think it's more of a local store, so for those of you who don't live around here, Menard's is a hardward store with a small grocery section. Weird, I know, but whatever. Here is what I bought there:
The awesome teacher I work with alerted me of the Crystal Light deal. They were $1.99 for a 6 pack, plus a mail-in-rebate (MIR) of $1.50 for each pack (limit 8). So I bought 8. That's $0.49 for a 6-pack! Meaning each bottle is about 8.2 cents. I had to do it. That is too good to pass up.
While I was there I noticed that they also had 4-packs of the Rip It energy drinks for $3.49 with a MIR of $1.50 each (limit 4). I know James likes energy drinks, but they're usually so expensive so he doesn't get them often. So I picked up four packs for him. $0.50 for an energy drink is pretty good. Plus he deserves a treat for being such a good husband and daddy. :)
Everything I bought today cost me a grand total of $47.09. That's a pretty good haul!

I know James likes energy drinks, but they're usually so expensive so he doesn't get them often. So I picked up four packs for him. $0.50 for an energy drink is pretty good. Plus he deserves a treat for being such a good husband and daddy. :)
Everything I bought today cost me a grand total of $47.09. That's a pretty good haul!

Roller Coaster
That is what my day was like - a roller coaster.
I'll start with the good stuff.
My four-day weekend has begun! There's no school on Good Friday or Easter Monday. James has to work this weekend (Sat-Sun), but he has Friday and Monday off, so I get to spend half of the long weekend with my boys! And tomorrow is James's morning to get up with Isaac, so I'll get to sleep in!
And the best news of the day is... I'm going to see John Mayer in concert next week!! He's going to be at the Fargodome and my friend, Gina, is going with me. I am so excited! I LOVE John Mayer! Granted, I am a little behind on his music simply because I don't own his newest CD yet, but I am going to buy it on iTunes as soon as I'm finished with this blog! Thursday is the day! Let the countdown begin!
Here's a little eye candy for ya.
Now for the not-so-good stuff.
James told me he might have to work on Mother's Day. Not just any Mother's Day, but my first Mother's Day. I was very disappointed. I guess I imagined that my first Mother's Day would be full of pampering and getting my way. :) It was disappointing to know that James thought it would be no big deal if he switched for that weekend. I let him know that I wouldn't be happy if he had to work that day. We'll see what happens. That kind of put a damper on my day though.
Then I went to one of our local middle schools to get homework for one of our students. One of the teachers who works there sends her kids to the same daycare that Isaac goes to. I see her almost every morning. Well, while I was at this school, I was standing right next to her for about 30 seconds in the office. I kept looking over at her, planning on saying "hi" when she looked at me. It never happened because she never even acknowledged me. I was standing right next to her. She knew I was there, yet she chose to ignore me. I was surprised, and not in a good way. It kind of put me in a bad mood. How difficult would it have been for her to glance at me and say hello? I mean, come on. It isn't as if she didn't know who I was. I guess seeing someone every single morning means absolutely nothing. Oh well. I guess I won't waste my time or energy being friendly anymore.
I also went shopping today. I'm planning on posting my deals, but I might wait until tomorrow because we just started watching Sherlock Holmes. My brother rented it and is letting us watch it before we have to return it. It's due tonight, so if we're going to watch it, we have to do it now. I'll probably post my shopping details tomorrow morning, or if I decide to stay up late (not likely) maybe even tonight.
